2 large chicken breasts (slice thin into cutlets)

1 tsp salt

½ tsp black pepper

1 tsp garlic powder

1 tsp paprika

½ tsp dried oregano

Herb Crust

1 cup panko breadcrumbs

½ cup grated Parmesan

1 tsp dried parsley or Italian seasoning

1 tbsp olive oil (for crisping)

Hot Honey Lemon Feta Topping

½ cup feta cheese (crumbled)

2 tbsp Greek yogurt (for creaminess + protein)

1 tbsp hot honey (or honey + red pepper flakes)

Juice of ½ lemon

Zest of ½ lemon

Optional: fresh herbs (parsley or basil)

Slice breasts thin so they cook evenly. Pat dry (this is how you get CRISPY).

Season both sides with salt, pepper, garlic powder, paprika, oregano.

Make the crust

Mix panko + parmesan + herbs + olive oil.

Coat the chicken

Press each cutlet firmly into the crust mixture so it sticks WELL.

Bake

Place on a lined baking sheet or rack.
