Spiced Cauliflower, Chickpea & Tiziki Bowl

Tzatziki:

1 cup plain coconut or soy yogurt (greek style best)

1 small cucumber, grated and juice squeezed out

Pinch of salt and pepper

Juice from 1 lemon (2-3 tbsp)

1 garlic clove minced

1 tbsp chopped fresh or dried dill

1 tbsp chopped mint

1/2 tbsp olive oil

Roast Veg and Chickpeas:

1 head of cauliflower, cut into small florets

1 red onion, sliced into chunks

420g can chickpeas, drained, rinsed and pat dry to remove any water.

1 red capsicum/bell pepper, sliced into chunks

Drizzle of olive oil to coat it all

3 tsp smoked paprika

1 tsp onion powder

2 tsp garlic powder

2 tsp dried parsley

Generous pinch of salt and black pepper

Preheat oven to 200°C/400°F. Mix the seasoning/spices in a bowl.

Add the cauliflower, chickpeas, capsicum and onion to the baking pan. Drizzle with olive oil and sprinkle over the seasoning. Toss to coat. Bake for around 35 minutes until golden.

Whilst it’s baking, mix together the tzatziki ingredients in a bowl.

Add the tzatziki to the bowls and top with the roasted veg and chickpeas. Sprinkle with sesame seeds and extra parsley. Enjoy
