Tuscan Shrimp Orzo (one-pan, 30-minute Meal

Ingredients (Serves 4)
For the Shrimp:
1 lb (450g) large shrimp, peeled & deveined
1/2 tsp smoked paprika
Salt & pepper, to taste
1 tbsp olive oil
For the Orzo:
1 tbsp olive oil (plus more if needed)
3–4 cloves garlic, minced
1/2 yellow onion, finely diced
1/2 tsp chili flakes (optional)
1 cup orzo pasta
2 1/2 cups low-sodium chicken or vegetable broth
1/2 cup sun-dried tomatoes in oil, chopped
2 cups baby spinach
1/3 cup heavy cream (or half-and-half)
1/3 cup grated Parmesan cheese
Zest of 1/2 lemon
Juice of 1/2 lemon

Sear the Shrimp
In a large sauté pan or skillet, heat 1 tbsp olive oil over medium-high heat.
Season shrimp with paprika, salt, and pepper. Sear for 1–2 minutes per side until just cooked. Remove and set aside.
Sauté Aromatics
In the same pan, add another tbsp olive oil if needed. Sauté onion and garlic for 2–3 minutes until fragrant. Add chili flakes if using.
Toast the Orzo
Stir in the orzo and cook for 1 minute to lightly toast it.
Simmer
Add the broth and sun-dried tomatoes. Stir and bring to a boil. Reduce heat to medium-low, cover, and simmer for about 10–12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
Finish with Cream & Greens
Stir in spinach, cream, Parmesan, lemon zest, and juice. Let it all melt and come together for 2–3 minutes.
Return Shrimp
Add the cooked shrimp back to the pan. Toss gently and heat for another 1–2 minutes until warmed through.
Serve
Spoon into bowls and serve with extra Parmesan, a drizzle of olive oil, or fresh herbs like basil or parsley.
