Parmesan Crusted Potatoes - Crispy

1 ½ lbs baby yukon gold potatoes
1 cup freshly grated parmesan
2 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
1/4 tsp thyme
1/8 tsp salt
1/8 tsp pepper

Preheat oven to 415F. Wash, dry and slice the potatoes in half length wise. Add potatoes to a large bowl. Add olive oil to coat and all spices, mix together. In a baking dish, spread a thin layer of olive oil or butter. Spread the parmeson on top and place potatoes skin side up on the dish pressing down into the parmesan. Roast for 25-30 min until potatoes are fully cooked through and parmesan is browned on the edges. Remove and let sit for 5-10 min to let the parmesan harden.
