White Beans And Kale

1 tbsp neutral oil

3 cloves garlic

1 tsp red chili flakes

1/3 cup white wine or vermouth

3 × 390 ml cannellini/white beans

Some parmesan

1 cup chicken or veg broth

1 small bunch lacinato kale

1/2 tbsp white miso paste

1 lemon

1 tsp sherry vinegar

turn heat to medium, and to the pan, add 1 tbsp more oil, 3 oves minced garlic and 1 tsp chili flakes.

once garlic is golden, deglaze - add 1/3 cup of wine and let it bubble for a minute to cook off and reduce to half.

add all of your beans, 1 cup of chicken broth, 1/2 tbsp white miso paste, and parmesan. Set to medium high and simmer for 10 minutes, until broth has mostly evaporated.

mash about 1/3 of the beans. Add in kale and cook for about 3 minutes to until tender.

finish with zest and juice of half a lemon, lots of black pepper, and 1/2 tsp of of sherry vinegar. Taste and adjust as needed.
