Chicken-Vegetable Stir-Fry with Bell Pepper, Carrot & Zucchi

2 chicken breasts (approx. 300–350 g)

1 red bell pepper

1 medium carrot

1 small zucchini

1 onion

2 cloves of garlic

3 tbsp soy sauce

1 tbsp honey (or maple syrup)

1 tbsp oil (e.g. sesame, sunflower, or rapeseed oil)

Salt and pepper

Optional: a bit of chili, spring onions, sesame seeds

Preparation:

Cut chicken into thin strips.

Cut bell pepper into strips or chunks, carrot into thin sticks, and zucchini into half-moons.

Finely chop the onion and garlic.

Make the sauce:

Mix 3 tbsp soy sauce and 1 tbsp honey in a small bowl.

Add chili to taste.

Sauté:

Heat oil in a large frying pan.

Sauté onion and garlic until translucent.

Add chicken and fry until golden brown on all sides (about 5–6 minutes).

Add vegetables:

Start with the carrots (they take longest to cook), then after 2 minutes add bell pepper and zucchini.

Stir-fry everything for about 5–7 minutes until the vegetables are tender but still slightly crisp.

Season:

Pour in the soy-honey mixture and stir everything well.

Let it simmer for 2 more minutes until slightly caramelized.

Serve:

Sprinkle with spring onions, sesame seeds, or fresh coriander if desired.

Serve with rice, couscous, or crusty flatbread.
