Pompoko Japanese Style Hamburgers

4 sesame potato buns (see Tips on page 126)
4 slices of cheddar cheese
4 tbsp. homemade ketchup (see Tips page 120)
4 large slices of lettuce
4 slices of green shiso
4 nice slices of pickles or cucumber
FOR THE HAMBAGU STUFFING (JAPANESE-STYLE CHOPPED STEAKS)
1 large onion
8¾ ounces (250 g) ground (minced) beef
54 ounces (150g) ground (minced) pork (substitute veal or lamb for Kio)
1 egg
1 tsp. (5 g) salt.
2 tbsp. of veal stock on ice (see Tips on page 115)
1 tsp. red miso
2 tbsp. panko breadcrumbs
1 tsp. powdered aonori (nori seaweed) or flat parsley
Sesame oil
Vegetable oil (olive or grape seed)

1 • Begin by preparing the hambagu stuffing: peel and chop the onion. Pour a little vegetable oil into a frying pan and heat it up on medium heat.
Add the chopped onion and fry for 5 minutes without caramelizing it too much. Set aside.
2 • Make the stuffing by placing the ground beef and pork, egg, salt, veal stock, miso, panko breadcrumbs, nori powder, and onion in a mixing bowl. Mix the ingredients by hand for 2 minutes until it is thick and smooth.
3 • Shape the steaks by hand: separate the stuffing into equal pieces. Lightly oil your hands with a drop of sesame oil and shape the steaks by passing them from hand to hand, as if you were juggling a single ball. This expels any air in the steaks to make sure they don't burst during cooking.
4 • Once the steaks are ready, place them in a dish and wrap them in clingfilm.
Set them aside in the refrigerator for 1 hour so that the fats set a little before cooking.
5 • Broil or toast the buns. Then prepare the burgers: pour a good drizzle of vegetable oil into a skillet and heat it over a high heat. Once the pan is hot, place the steaks on top and grill for a good minute per side before lowering the heat to medium. Continue cooking for 4 to 5 minutes, then place a slice of cheddar cheese on top of each steak and cover the pan so that the heat under the cover melts the cheese.
6 • Take the toasted buns, coat them with homemade ketchup and then assemble your burgers in this order, from the bottom to the top: bun, lettuce leaf, steak and melted cheese, shiso leaf, pickles and bun. Enjoy immediately!
