Italian Fried Potatoes

4 Yukon Gold potatoes, cut into wedges
1 eggplant, cut into wedges
1 green pepper, sliced
1 red pepper, sliced
1 red onion, sliced
1 cup cherry tomatoes, halved
3 garlic cloves, smashed
Chili pepper (fresh or flakes, to taste)
Fresh basil
Olive oil (generous)
Salt & black pepper
步骤
Heat a generous amount of olive oil and add the smashed garlic and chili pepper.
Add the potatoes and cook for a few minutes on high heat.
Then add the eggplant and continue cooking until lightly browned.
Add the peppers and onion and cook until soft.
Add the cherry tomatoes, season with salt and pepper, and cook for 2-3 minutes until just softened.
Turn off the heat, tear in fresh basil, and finish with a drizzle of olive oil
