🍮 Homemade Butterscotch Pudding

🧂 Ingredients:

1 cup brown sugar (light or dark for deeper flavor)

1/4 cup unsalted butter

1/4 cup cornstarch

1/2 tsp salt

2 3/4 cups whole milk

1/4 cup heavy cream (optional but extra rich)

3 egg yolks

2 tsp vanilla extract

🔧 Instructions:

1. Caramelize the sugar & butter:

In a medium saucepan over medium heat, melt the butter and stir in the brown sugar.

Cook for 2–3 minutes, stirring constantly, until the sugar melts and the mixture smells nutty and caramelized (but not burned).

2. Add the milk mixture:

In a separate bowl, whisk together cornstarch, salt, milk, cream, and egg yolks until smooth.

Slowly whisk this into the hot sugar mixture. Stir constantly to avoid scrambling the eggs.

3. Thicken the pudding:

Keep stirring over medium heat until the pudding starts to bubble and thickens to a custard consistency (5–8 minutes).

Once thickened, remove from heat.

4. Add vanilla:

Stir in vanilla extract and mix until smooth.

5. Strain (optional):

For extra smooth pudding, pour through a fine mesh strainer into a clean bowl.

6. Chill:

Pour into serving dishes or jars.

Press plastic wrap directly on the surface to prevent skin from forming.

Chill for at least 2 hours, or until cold and set
