High Protein Garlic Shrimp Fried Rice

For the Shrimp
800g Shrimp (use any shrimp)
30ml Light Soy Sauce & 10ml Dark Soy Sauce
1 Tsp Black Pepper
1 ½ Tsp Garlic Powder
1 ½ Tsp Onion Powder
1 Tsp Chilli Flakes
15g Light Butter for cooking
Yum Yum Sauce
80g Light Mayo
25g Ketchup
25g Sriracha
25ml Rice Vinegar
1/2 Tsp Paprika
1/2 Tsp Ginger Powder
Fried Rice
1 Tbsp Chopped Garlic
80g Chopped Green Onion
100g Frozen Carrots
100g Frozen Peas
4 Eggs
540g Day Old Cooked White Rice
15ml Soy Sauce
30g Oyster Sauce
15g Light Butter
Green Onion for Garnish

Start by combining the shrimp with soy sauce, black pepper, onion powder, garlic powder, and chili flakes in a bowl. Mix until the shrimp begins to change color and set aside to marinate.
In a large pan over medium heat, melt 1 tablespoon of butter. Add the marinated shrimp and cook for about 2 minutes on each side, or until golden brown and cooked through. Remove the shrimp from the pan and set aside.
In the same pan, add chopped garlic and green onions. Sauté for about 2 minutes, then add peas and carrots and stir to combine.
Move the vegetables to one side of the pan. Crack the eggs into the other side and scramble until fully cooked. Mix everything together.
Add the day-old rice to the pan along with soy sauce, oyster sauce, and the remaining tablespoon of butter. Stir well until everything is evenly coated and heated through.
Return the cooked shrimp to the pan and toss to combine. Add more green onions if desired.
In a small bowl, mix together mayonnaise, ketchup, sriracha, rice vinegar, ground ginger, paprika, and water until smooth and creamy. Adjust the amount of water to reach your desired sauce consistency.
Serve the shrimp fried rice hot, topped with the homemade Yum Yum sauce.
