Lentil Soup Recipe
Ingredients:
- 1 ½ cups of lentils, washed thoroughly until the water runs clear
- 1 tablespoon of rice
- 6 cups of water
- A pinch of salt
- 1 cup (tea glass) of olive oil
- 2 medium onions, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon of ground cumin (heaping)
- 1 teaspoon of ground coriander
- 1 teaspoon of paprika
- Juice of 1 lemon

Instructions:
1. **Cook the Lentils:**
- In a pot, combine the lentils, rice, water, and salt.
- Bring to a boil over medium heat, skimming off the white foam that rises to the surface.
- Reduce the heat to low and simmer for about 30 minutes, or until the lentils are tender.
2. Prepare the Oil and Spices:
- Heat half the olive oil in a skillet over medium heat.
- Sauté the chopped onions until golden, then add the minced garlic.
- Stir in the cumin, coriander, and paprika, mixing well to release their aroma.
- Turn off the heat and set aside.
3. Combine and Blend:
- Add the onion and spice mixture to the pot with the cooked lentils.
- Pour the remaining olive oil and the lemon juice into the pot.
- Using a hand blender, blend the soup slightly to achieve a creamy texture, leaving some lentils whole for texture.
4. Serve:
- Adjust seasoning if needed, and serve the soup warm with bread or your choice of side.
