Seafood Spaghetti - Σπαγγετι Με Θαλασσινα

6 medium prawns
1 squid
15 mussels
15 clams
1 onion, finely chopped
5 ripe tomatoes, grated
4 garlic cloves, minced
50 ml ouzo
100 ml extra virgin olive oil
Parsley (both stems and leaves)
Zest of 1 lemon
Salt and white pepper
1 bay leaf
500 g spaghetti

In a hot pan, add the mussels and clams. Cover and cook for 2–3 minutes until they open. Remove the shellfish and set aside. Reserve the juices they released.
In the same pan, add olive oil, parsley stems, lemon zest, and bay leaf. Sauté for 1 minute. Add sliced squid and prawns, sautéing for 1 minute on each side. Deglaze with ouzo and once the alcohol evaporates, remove the seafood, leaving only the oil in the pan.
Add onion and garlic to the pan and cook until translucent. Add grated tomatoes, the reserved shellfish broth, salt, and pepper. Simmer until the sauce thickens slightly but still retains its moisture.
Meanwhile, cook the spaghetti until 80% done. Transfer to the sauce along with one ladle of pasta water. Finish cooking the pasta in the sauce so it absorbs all the flavors.
Two minutes before serving, return all the seafood to the pan, add a final drizzle of olive oil, and toss to combine.
To serve: Garnish with finely chopped parsley.
