The Best Chocolate Cake in the World

200g of butter

200g of dark chocolate (at least 70%)

30g of unsweetened cocoa powder

30g of flour

A pinch of salt

6 eggs

225g of sugar

Preheat the oven to 180°C. Butter a 22 cm springform pan.

Melt the chocolate and butter together.

Separate the eggs: whites in one bowl, yolks in another. Whisk the yolks with half of the sugar until the mixture thickens and lightens in color.

Whisk the egg whites into stiff peaks, then gradually add the remaining sugar until you have a firm, glossy meringue.

Mix the melted chocolate with the yolks. Add the cocoa powder and flour. Add a spoonful of egg whites to loosen the mixture, then gently fold in the rest, being careful not to deflate the air.

Pour ⅔ of the batter into the pan and bake for 25 minutes. Let it cool.

Set aside the remaining 1/3 of the batter in the fridge.

Once the cake has cooled, preheat the oven to 180°C. Spread the reserved 1/3 of the batter over the cake, then bake for another 10-15 minutes, until a thin crust forms.

Let it rest for 10 minutes, then serve with custard or vanilla ice cream.
