Chipotle Chicken Burritos

配料

  • 3.75 lbs boneless chicken thighs

  • 2 lbs yellow onions

  • 3 lbs bell peppers

  • 1 cup Greek plain non-fat yogurt (5.3oz)

  • 16oz Wegmans corn salsa

  • 7oz Goya chipotle peppers in Adobo sauce

  • 3 tbsp tomato paste

  • 8oz low fat shredded cheese

  • See: “Mrs. Flynn’s Taco Seasoning”

步骤

  1. Preheat oven to 425 F

  2. Dice onions and peppers and spread on a baking sheet

  3. Bake for 1.5 hours mixing every 20 mins

  4. Dice raw chicken and pan fry with taco seasoning

  5. Drain any juices and then move to a bowl

  6. Add vegetables to the pan with the cheese, chipotle peppers, tomato paste and yogurt

  7. Mix on medium heat and add taco seasoning to taste

  8. Wrap into burritos

备注

La Banderita CarbCounter tortillas taste great

Veggies on a sheet pan took 1.5 hours. Either split to a full sheet or 2 half sheets.

Maybe add sour cream next time?
