Cheesy Potato And Smoked Sausage Soup

1 pack smoked sausage (I used Eckrich cheese)
1 1/4 lb bag of baby gold potatoes
2 celery stalks finely chopped
1/2-1 lg onion finely chopped
1/3-1/2 bag match stick carrots
1/4 block of Velveeta (8 oz)
1C colby jack shredded
1C cheddar shredded
1 carton low sodium chicken broth
4T flour
1C heavy cream
1/2C half and half or milk (not skim)
1/2-1T minced garlic (not dried)
2T butter
1T olive oil
Seasonings all to taste:
Paprika
Smoked paprika
Morton’s Seasoning blend
Black pepper
Salt
Pinch of red pepper flakes
Fresh Italian parsley

Half or quarter baby potatoes to preference and set aside. Cut sausage in to circles or bite size pieces. Sear/brown sausage to preference. While sausage is browning, finely chop onion, celery, and chop carrots smaller if preferred. Remove sausage and set aside. Put butter and olive oil in pan. Sauté for a few minutes the add garlic and sauce 1 minute. Sprinkle in flour, Sauté another 2-3 minutes. Next add back sausage, chicken broth, potatoes, and seasonings. Cook until potatoes are tender. Slowly add cream and half and half and then start slowly adding cheese. Taste to check seasoning and add parsley.

I used my power xl multi cooker so was able to do this in one pot.
