1 (6-ounce) boneless strip steak, 1 to 1½ inches thick, trimmed

⅛ teaspoon table salt

⅛ teaspoon pepper

1 tablespoon oil

步骤

1 Adjust oven rack to middle position and heat oven to 225 degrees. Pat steak dry with paper towels, sprinkle with salt and pepper, and place on wire rack set in rimmed baking sheet. Roast until steak registers 120 degrees (for rare to medium-rare), 35 to 45 minutes.

2 Heat oil in 10-inch skillet over medium heat until just smoking. Add steak and cook until well browned all over, about 4 minutes, flipping steak every minute. Return steak to wire rack and let rest for 5 minutes. Transfer steak to cutting board and slice thin against grain. Serve. (Steak can be refrigerated for up to 3 days.)
