French Onion Soup

3 large onions sliced into rings

3 tbsp oil

¾ cup water

¼ tsp baking soda

1 tbsp water

½ tsp salt

1 tbsp flour

1 cup white wine

5 - 6 cups beef or chicken stock

1 tbsp worcestershire sauce

Croutons

3 cups cubed French or sourdough bread

3 tbsp olive oil

¼ cup grated parmesan cheese

1 cup grated mozzarella cheese

Slice onions into rings, add to large skillet with water and oil, bring to a boil, cover and simmer about 5 – 8 minutes or until liquid has evaporated.

With wooden spoon continue stirring/cooking without lid on medium heat another 5 minutes.

Mix baking soda with water, add to onions and saute another 5 minutes until golden.

Add salt, mix well, then flour and mix well and cook for 1 minute, then wine and sauté until wine has evaporated.

Add stock, bring to a boil, then simmer for 10 minutes, add Worcestershire sauce.

Meanwhile make croutons. Cut bread into small pieces, add oil and cheese and bake at 425 F until browned, about 5 minutes.

Divide soup into small soup cups, add croutons and sprinkle with cheese – broil for 1 minute (bowls won’t break). Enjoy!!
