Thick Rice Water (Congee Rice Soup) 濃米湯

1/2 cup white rice (short-grain makes it creamier, but any type works)

8–10 cups water

Optional additions:

1–2 slices fresh ginger (warms the stomach)

1–2 red dates (tonifies Qi)

A few goji berries (nourishes Yin)

步骤

1. Soak the Rice

Rinse the rice thoroughly.

(Optional) Soak for 30 minutes to help it cook into a smoother, silkier texture. Drain the soaking water.

2. Add the rice and 8-10 cups of water to a pot.

Bring to a boil over high heat, then reduce to low heat.

Simmer for 15–20 minutes, stirring occasionally to prevent sticking.

Cook until the liquid becomes milky white and thick, and the rice appears swollen and begins to break apart.

3. Serve

For the thickest rice water: Strain through a fine sieve or cheesecloth and drink only the liquid.

*For a thicker, congee-style soup: continue cooking for another 15–20 minutes, until the rice releases a thin layer of “rice oil” on the surface. Serve as is, without straining.

备注

How to Drink

Drink the liquid once it has cooled, and reserve the rice for later. Enjoy warm, 1 cup per serving. 2–3 times a day is ideal.

Ideal for recovery from colds, weak digestion, postpartum nourishment, or for children.

Take it a few times throughout the day. Encouraging a light sweat is beneficial.

Tips

For thicker texture: cook longer.

For smoother texture: stir briskly near the end of cooking.

Avoid adding sugar (a small piece of rock sugar is okay if desired).
