Seven Layer Salad

1 pound of bacon, cooked and diced

6 large eggs, hard-boiled

1 1/4 cups of low-fat mayonnaise

2/3 cup finely grated Parmesan cheese

2 tablespoons granulated sugar

1/4 teaspoon ground pepper

1 large head of iceberg lettuce, chopped

1/2 red onion, finely chopped

10 ounces frozen green peas, thawed

8 ounces of cheddar cheese

green onions, diced

  1. In a large heavy-bottomed skillet, cook the bacon until crisp. Transfer to a paper towel-lined plate. Once cooled, dice it and set aside.

  2. While the bacon is cooking, place the eggs in a large pan and cover with water. Bring to a boil. Then turn off the heat and cover for 10 minutes. Transfer the eggs to a bowl filled with ice water and let sit for 5 minutes. Peel and dice.

  3. Whisk together the mayonnaise, Parmesan, sugar, and pepper to make the dressing.

  4. In a large glass bowl or trifle dish, spread the lettuce. Top with the red onion, the diced eggs, and then the peas.

  5. Spread the dressing over the salad. Then top with the shredded cheese and the cooke bacon. Sprinkle with diced green 4 onions for a garnish if desired.
