Chicago Deep Dish Pizza

Dough
1 cup warm water
1/4 cup salad oil
1 package quick raise yeast
2 Tablespoons Olive oil
1 1/2 cup flour
1/4 cup Corn Flour
Sauce
2 large cans whole tomatoes
1 can tomato paste
Basil
Oregano
Thyme
Garlic
Toppings
1 pound mozzarella cheese
Topping of your choice

Dough
In a stand mixer bowl, add yeast in warm water. Allow the yeast to dissolve in water for 5 - 10 minutes. Stir any remaining yeast into water. Add salad oil, olive oil, 1 1/2 cup flour and corn meal. Using the dough hook, mix on low speed until well blended.
Add additional 1 1/4 cup flour. Mix on low until additional flour is blended. Allow the dough to rest for 20 minutes.
Using the dough hook, knead the dough for 8-10 minutes until the dough is elastic but smooth. Allow to rise for 1 to 1 1/2 hours.
Sauce
Drain tomatoes. In a saucepan, crush the tomatoes. Add tomato paste. Season to taste with basil, oregano, thyme and garlic. Simmer in order to reduce.
Pizza Assembly
Add a small amount of oil in the bottom of the pizza pan. Sprinkle a little cornmeal the bottom of the pan. Press dough into bottom of pan. Push a small amount of dough up the side of the pan. Spread cheese over dough. Spread desired toppings over cheese. Spread sauce over cheese and toppings.
Bake at 425°F for 30-40 minutes.
