Cowboy Butter Chicken

Cowboy butter sauce :

1 1/2 Sticks of Butter

6 Garlic Cloves (minced)

1 Medium Shallot (minced)

2 Tbsp Fresh Parsley (chopped)

2 Tbsp green onions (green part) (minced)

1 Tsp Dry Thyme

1/2 Tsp Red Pepper Flakes

1/2 Tsp Cayenne Pepper

1/2 Tsp Smoked Paprika

1 Tbsp Worcestershire Sauce

2 Tbsp Dijon Mustard

Salt to taste - I used 1/2 teaspoon

Chicken

1.5 pounds chicken

1.5 tablespoons lemon pepper seasoning

1 teaspoon cayenne and paprika, 1/2 teaspoon salt

One tablespoon olive oil

To a hot pan (then turn off heat) and remove from heat add the butter. You don’t want butter completely melted, you want it soft.

Add shallot, garlic, thyme, chili flakes, paprika (smoked if you have ) cayenne, Worcestershire sauce, Dijon mustard and salt.

Mix and put on heat for one minute on low heat. Remove from heat.

Add in the fresh parsley and green onions.

Season the chicken. You can use any seasoning you like or season with lemon pepper seasoning, paprika, cayenne, salt and olive oil. Mix .

In olive oil sear the chicken 3-4 minutes on each side.

Remove to a plate.

Brush on the cowboy butter.

Serve hot. Cowboy butter is great with any meat, rice or potatoes.
