1 Pan Mexican Chicken & Rice: Our Simple Weekly Dinner Recip

2 chicken breast, halved

2 tsp olive oil

1 capsicum, thinly sliced

2 cups chicken stock

1 cup tinned diced tomatoes

1 1/2 cups long grain white rice

1 tsp chilli flakes

1 cup grated mozzarella

步骤

Preheat oven to 200C.

Heat the oil in a pan over medium heat.

Add chicken & cook for 1-2 mins/side.

Add capsicum & sauté for 2 mins.

Add remaining ingredients except mozzarella & stir.

Cover with a lid & bake for 30 mins.

Remove the lid & sprinkle the cheese on top.

Bake for a further 20 mins (no lid) or until golden with the liquid absorbed 🌶️
