Pork Ribs

1 slab of Pork ribs (baby back)

1 tsp olive oil

Dry rib rub mixture

BBQ sauce

1. Preheat oven to 275 F. Line a baking sheet pan with foil.

2. Rinse the rack of ribs, pat dry, and pull the thin membrane off the back of the ribs (use paper towel to make easier).

3. Lay rack of ribs on the foil-lined baking pan, brush with olive oil and generously smear the rib rub all over the ribs (top, bottom, sides, everywhere).

4. Tightly cover the baking sheet with foil. The ribs should be meat-side up.

5. Bake the ribs for about 3-3.5 hours for St. Louis style ribs, and about 2.5 hours for baby back ribs.

6. Uncover and check for tenderness. Ribs should be pulling away from the bone at this point and fork-tender.

7. Remove ribs from the oven, and increase cooking temperature to 350 F. If any liquid has accumulated in the pan, drain it off.

8. Cover the ribs generously with the BBQ sauce.

9. Return to oven, uncovered, and let the ribs bake an additional 20 minutes. To caramelize the BBQ sauce, broil for 2 min on low broil at the near end of the 20 minutes.

10. Remove from the oven and let rest for 10 minutes before cutting and serving.
