Apple Olive Oil Cake

• 4 TB unsalted butter • 1/2 cup brown sugar • 1/2 tsp ground Cinnamon • 2 apples, peeled, cored, sliced into half-moons • 2C ap flour • 13/4 C sugar, plus extra for greasing a 11/2 tsp salt • 1/2 tsp b. Soda • 1/2 tsp b. Powder • 11/3C extra virgin olive oil • 1 1/4 C whole milk * 3 large eggs • 1 TB orange zest • 1/4 C fresh oj • 1/4 c Grand Marnier a powdered sugar, for garnish

Step Preheat the oven to 350F. Butter a 9" round baking pan and sprinkle with sugar. In a small bowl, mash together the butter, brown sugar and cinnamon. Dollop into the bottom of the cake pan. Layer the apples into the bottom of the pan, dont go crazy because they will float to the top. Step 2 In a bowl, whisk the flour, sugar, salt, baking soda and powder. In another bowl, whisk the olive oil, milk, eggs, orange zest and juice and Grand Marnier. Add the dry ingredients; whisk until just combined. Step 3 Pour the batter into the prepared pan and bake for 1 hour, until the top is golden and a cake tester comes out clean. Transfer the cake to a rack and let cool for 30

minutes

Step 4 Run a knife around the edge of the pan, invert the cake onto the rack and let cool completely. Garnish with powdered sugar.
