1 ½ cups oat flour

½ cup vanilla protein powder

½ cup plain Greek yogurt

2 whole eggs

½ cup unsweetened applesauce

⅓ cup maple syrup or sugar-free syrup

¼ cup Fairlife milk

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

½ tsp cinnamon

Pinch of sea salt

Apple Filling

1 medium apple, diced small

1 tbsp butter

1 tsp cinnamon

1 tbsp maple syrup or allulose

Cinnamon Swirl

2 tbsp coconut sugar or brown sugar substitute

1 tsp cinnamon

Protein Glaze

½ scoop vanilla protein powder

2 tbsp Greek yogurt

Splash of milk

1 tsp maple syrup or powdered allulose

Preheat oven to 350°F.

Grease a loaf pan or line with parchment paper.

In a skillet, cook diced apples with butter, cinnamon, and syrup for about 5 minutes until soft and caramelized.

In a bowl, whisk together eggs, yogurt, applesauce, syrup, milk, and vanilla.

Add oat flour, protein powder, baking powder, baking soda, cinnamon, and salt. Mix until smooth.

Pour half the batter into the loaf pan.

Add half the apples and sprinkle half the cinnamon swirl mixture.

Repeat with remaining batter, apples, and cinnamon swirl.

Use a knife to lightly swirl everything together.

Bake 45–55 minutes or until center is set.

Cool slightly before drizzling with the protein glaze.
