Silky Walnut & Black Sesame Paste 核桃芝麻糊

3/4 cup black sesame seeds (toasted)

1/4 cup purple glutinous rice (or regular glutinous rice)

1/3 cup rock sugar (or 1/4 cup white sugar) (optional)

2.5 cups water

6 pieces walnut halves

1 Prep the sesame seeds: If using raw black sesame seeds, toast them in a dry pan over low heat, stirring constantly, until fragrant. Be careful not to over-toast — they'll turn bitter. Pre-toasted seeds can be used directly.

2 Prep the walnuts: Use 6 raw walnut halves or for extra flavour, roast them in the oven at 160°C (320°F) for 8 minutes first.

3 Rinse the sesame seeds, rice, and walnuts together, then choose your method:

Heating blender (e.g. Chinese 破壁机 or Vitamix with cook setting): add everything with 2½ cups water and run the 'rice paste' or 'hot soup' setting (~26 minutes). It cooks and blends in one go — skip to step 5.

Standard blender: simmer the glutinous rice in 2½ cups water for 20 minutes until soft, then add the sesame seeds and walnuts and blend until smooth.

4 (Standard blender only) Transfer the blended mixture to a saucepan and heat gently over low heat for 5 minutes, stirring, until warmed through and velvety.

5 Add sugar and stir or blend for ~4 minutes until fully dissolved and silky smooth. Adjust sweetness to taste.

6 Pour into bowls and serve warm. Enjoy!

✨ OVERALL FORMULA This recipe is a classic Liver-Kidney tonic. The combination of black sesame (Yin nourishing) and walnuts (Yang warming) creates a balanced formula — nourishing without being too cold, warming without generating Heat. Ideal for: fatigue, hair thinning, dry skin, lower back weakness, and those recovering from illness. Best enjoyed warm in the evening.

⚫ BLACK SESAME SEEDS (Hēi Zhī Ma 黑芝麻)

•Nature: Neutral | Taste: Sweet

•Meridians: Liver, Kidney, Large Intestine

•TCM Benefits: Tonifies Liver and Kidney Yin, nourishes Blood and Jing (Essence), and moistens the intestines. In TCM, black-coloured foods are strongly associated with the Kidney system — governing bones, reproductive health, and longevity.

Classically used for premature grey hair, dizziness, blurry vision, tinnitus, dry skin, and constipation. The Ben Cao Gang Mu states it "nourishes the five organs, enhances energy, and replenishes essence and marrow."

🟤 WALNUTS (Hú Táo Rén 胡桃仁)

•Nature: Warm | Taste: Sweet

• Meridians: Kidney, Lung, Large Intestine

• TCM Benefits: A premier Yang tonic. Warms and tonifies Kidney Yang, helps the Kidneys "grasp" Lung Qi (useful for chronic cough and asthma), and lubricates the intestines.

Classically used for lower back and knee pain, fatigue, impotence, and constipation. The walnut's brain-like appearance is a classic example of TCM's "doctrine of signatures" — and modern science agrees: walnuts are among the richest plant sources of omega-3s for brain health.

🍚 GLUTINOUS RICE (Nuò Mǐ 糯米)

• Nature: Warm | Taste: Sweet

• Meridians: Spleen, Stomach, Lung

• TCM Benefits: Warms and strengthens the Spleen and Stomach, tonifies Qi, and replenishes energy.

In this recipe it serves double duty — as a TCM digestive tonic AND as the culinary binder that gives the paste its signature silky texture. Suitable for those with cold constitutions, fatigue, or weak digestion.

🍬 ROCK SUGAR (Bīng Táng 冰糖)

• Nature: Neutral | Taste: Sweet

• Meridians: Lung, Spleen

• TCM Benefits: Gentler than white sugar. Moistens the Lungs, harmonises the Stomach, and is less likely to generate internal Heat. Traditionally preferred in TCM tonic recipes for its mildly nourishing quality.
