Italian Pork Stew

2 pounds lean pork
3 Tablespoons Olive Oil
3 Carrots, sliced
1 1/2 teaspoons salt
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 teaspoon pepper
1 cup dry white wine
1 cup chicken broth
1 or 2 green peppers
16 ounce can Italian tomatoes, drained and chopped

Cut pork into 1 inch cubes.
Cut pepper into 1 inch squares
Cook pork in oil, stirring about 5 minutes until pork loses its red color but do not brown.
Add carrots and seasoning.
Add wine and broth. Heat to simmer. Cover and bake at 325 degrees F for 1 1/2 - 2 hours or until pork and carrots are tender.
Skim off fat. Lightly, sauté green peppers in 1 Tablespoon oil. Drain and chop tomatoes. Add tomatoes and peppers to stew. Bake 15 minutes more. Thicken liquid with flour if desired.
