Flourless Cinnamon Swirl Chia Seed Cake

For the Cake:

3 large eggs

½ cup (120ml) maple syrup or honey

1 tsp vanilla extract

¼ cup (60g) coconut oil, melted (or butter)

¾ cup (180g) plain Greek yogurt (or dairy-free yogurt)

1 ½ cups (150g) almond flour

2 tbsp chia seeds

1 tsp cinnamon

½ tsp baking soda

Pinch of salt

For the Cinnamon Swirl:

2 tbsp maple syrup or coconut sugar

1 tbsp cinnamon

1 tbsp melted coconut oil

Preheat & Prep: Preheat oven to 350°F (175°C). Line a 7 or 8-inch (18–20cm) round cake pan with parchment paper.

Mix Wet Ingredients: In a large bowl, whisk together eggs, maple syrup, vanilla, melted coconut oil, and Greek yogurt until smooth.

Add Dry Ingredients: Stir in almond flour, chia seeds, cinnamon, baking soda, and salt. Mix until combined.

Make Swirl Mixture: In a small bowl, mix the maple syrup (or coconut sugar), cinnamon, and melted coconut oil for the swirl.

Assemble: Pour half the batter into the pan, drizzle half the swirl mixture, then add remaining batter and swirl in the rest with a knife or toothpick.

Bake: Bake for 30–35 minutes, or until a toothpick comes out mostly clean. Let cool completely.
