For Batter:

4 large eggs, room temperature

1 & 1/2 cups whole milk, lukewarm

3/4 teaspoon salt

1 & 1/2 cups all-purpose flour

3 tablespoons melted butter

For baking:

4 tbsp ghee, oil or beef tallow (to grease popover pan)

For Jam Butter: Mix 1/2 cup jam with 1/2 softened butter until well combined.

For Parmesan Herb Butter: Mix 1 tbsp chives (or any chopped herbs), 1 cup butter, 1/3 cup grated Parmesan and a pinch of salt until well combined.

In a blender, add eggs, milk, and salt, flour, until smooth. Then add the melted butter at the end, blending until frothy. Let batter rest for at least 30 minutes while you preheat the oven.

Preheat the oven to 450 degrees F and place rack in the bottom third position.

Grease popper pan well with ghee or oil. Place the popover pan or a muffin tin on a baking sheet; put on the lower rack of oven for 5-10 minutes while oven is preheating.

Take the popover pan out of the oven and pour the rested batter evenly into the pan.

Bake the popovers for 20 minutes without opening the oven door.

Reduce the heat to 350°F (without opening the door), and bake for an additional 10 minutes, until they have “popped” over the tops of the pan, and are golden brown

Transfer the popovers to a serving plate and serve with jam butter and Parmesan herb butter. Devour!
