Easy Mediterranean Flatbread with Fresh Herbs & Hummus

Ingredients (makes 2 flatbreads):

2 naan or pita flatbreads

1 cup hummus (classic or flavored, like roasted red pepper)

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup kalamata olives, sliced

1/4 cup red onion, thinly sliced

1/4 cup crumbled feta cheese

2 tbsp chopped fresh parsley

1 tbsp chopped fresh dill

Olive oil, for drizzling

Fresh lemon juice, for finishing

Salt & pepper, to taste

Warm the Flatbreads:

Lightly toast the flatbreads in a dry skillet, oven, or grill until warm and slightly crisp.

Spread Hummus:

Generously spread 1/2 cup hummus over each flatbread as the base.

Top with Veggies:

Evenly layer cherry tomatoes, cucumber, olives, and red onion over the hummus.

Add Cheese & Herbs:

Sprinkle with feta, parsley, and dill.

Finish:

Drizzle with olive oil and a squeeze of lemon juice. Season with salt and pepper to taste.

Serve:

Slice and enjoy immediately, or serve as an appetizer or light meal.
