Crispy Roasted Truffle Potatoes

3 pounds Yukon Gold potatoes

4 Tablespoons olive oil

1 teaspoon truffle salt (for extra truffle flavor or sea salt)

2 teaspoons garlic powder

2 Tablespoons truffle oil (the truffle oil with natural flavors is stronger than oil infused with actual truffles)

4 cloves garlic (minced)

Optional: ⅓ cup parmesan cheese (grated)

Finely chopped flat-leaf parsley for garnish (don’t overthink the measurement - just eyeball it)

Cut the potatoes into 2-inch pieces. Soak in ice water for 15 minutes. Dry thoroughly.

Preheat the oven to 400 degrees F and line a baking sheet with unbleached parchment paper.

Place potatoes in a bowl and toss with olive oil, salt, and garlic powder.

Transfer the potatoes to the prepared baking sheet and cook for 30 minutes, tossing half way through at 15 minutes.

Raise oven temperature to 425 degrees F and cook for 10 more minutes. Toss in the sheet pan beforehand ensuring the potatoes are crispy all around.

Take potatoes out of the oven and drizzle with truffle oil, minced garlic, and desired amount of parmesan cheese. Return the pan to the oven and roast for another 4-5 minutes or until golden, crisp and fragrant. Do not let the garlic burn!

Taste for seasoning and garnish with parsley, extra truffle oil, truffle salt if needed and serve.
