Heather's basic sourdough

151 g starter (fed)
265 g lukewarm water
401 g unbleached bread/ all-purpose flour
12 g salt

Combine ingredients in a large bowl
Mix thoroughly with a wooden spoon or hand - dough will be very wet. Do not knead, just mix. Cover and leave for 1 hour.
After 1st hour, complete 6-8 folds. Rest 1 hour
After 2nd hour, complete 6-8 folds. Rest 1 hour
After 3rd hour, complete 6-8 folds. Rest for 8-48 hours in the fridge.
Turn dough onto floured counter, rest for 15 minutes
Shape into a loaf, place in pan and let come to room temperature and proof for 2.5-3 hours
Bake at 425F for 25-35 minutes (may need to cover with foil after 20 minutes to prevent over-browning)
