Carmel Corn

1 cup un-popped popcorn
1 cup butter
2 cup brown sugar
½ cup light corn syrup
1 tsp. salt
1 tsp. baking soda
1 Tbsp. vanilla

Pop 1 cup popcorn & place in large bowl. (Hint - pour from one container into a turkey roasting pan to remove kernels that are not popped.)
Combine butter, sugar, syrup and salt in pan. Mix then heat to boiling. Boil 5 minutes stirring constantly. Stir in soda & vanilla. Mixture will bubble up. Pour mixture over popped corn (that's in your turkey roasting pan) & mix. Place popcorn mixture into oven and bake 1 hour at 200 degrees stirring every 15 minutes. Let cool, stirring during this time otherwise you will end up with a solid chunk of carmel corn. Store in an airtight container.
