The Dry Mix: • 170g Wholemeal Flour • 60g Ground Almonds • 110g Erythritol (adjust to 130g for sweeter) • 1 tsp Bicarbonate of Soda • 3 tbsp Linwoods Flaxseed Mix • ½ tsp Salt

The Wet Mix: • 3 Large Eggs • 80g Melted Coconut Oil (or Butter) • 100ml Sproud Milk • 1 tbsp Almond Extract (for that Bakewell punch) • 150g Frozen Raspberries (the "Jam" pockets) • 20g Flaked Almonds (for the topping)

The Method

1. Preheat: Set your oven to 160°C (Fan) or 175°C (Non-tan). Grease and line a 2lb loaf tin.

2. Whisk: In a large bowl, whisk the eggs, Erythritol, and almond extract until pale and slightly bubbly.

3. Combine: Stir in the melted oil and Sproud milk.

4. Incorporate: Gently fold in the wholemeal flour, ground almonds, bicarbonate of soda, salt, and flaxseeds. Do not over-work the batter.

5. The Fruit: Gently fold in the frozen raspberries. It is okay if they bleed slightly; this creates the "jammy" swirls.

6. Top & Bake: Pour into the tin and sprinkle with flaked almonds. Bake for 45-55 minutes. A skewer should come out clean.

7. Cool: This loat is delicate! Let it cool completely in the tin to allow the almond oils to set.
