Carrot Ribbon Salad

1 lb carrots, peeled into ribbons

1 bunch green onions, sliced

Big handful cilantro, chopped (if you don’t like cilantro try swapping in another herb like basil or mint, or just skip it!)

2 Tbsp toasted sesame seeds

2 Tbsp olive oil

2 tsp toasted sesame oil

1 Tbsp lime juice, from about 1 smallish lime

2 Tbsp rice vinegar

1/2 tsp ground ginger (or you could use fresh)

Small drizzle of honey (optional)

Salt to taste

步骤

Put everything in a large mixing bowl and mix until combined. I like to use my hands for this and massage it a bit until the salt dissolves.

Store in the fridge for up to 4 days (if it even lasts that long).
