Thai Chicken Meatballs

1 lb ground chicken
1/4 cup red bell pepper, diced
1/4 cup green onions, sliced
1/4 cup cilantro, chopped
4 cloves garlic, minced
1 inch ginger, minced
2 tbsp soy sauce
1 eggs
1/3 cup breadcrumbs
1 tsp salt
1 tsp pepper
1 tsp sesame oil
1 tbsp olive oil
1/4 red onion, diced
1/2 red bell pepper,diced
2 cloves garlic, minced
1 tbsp ginger, minced
2 tbsp peanut butter
1 can coconut milk
2 tsp curry powder (Jamaican if possible)
1 tsp turmeric powder
1 tbsp soy sauce
1/2 tsp sriracha
1 tsp salt
Fresh cilantro
1 lime, juiced

In a large bowl, mix all the meatball ingredients and form into balls.
Heat a large pan over medium heat, ad sesame oil and sear the meatballs for 3-4 minutes per side. Remove from pan.
In the same pan, add sesame oil, onion and bell pepper, sauté for 2 minutes. Add garlic, ginger, peanut butter, coconut milk, sriracha, soy sauce, curry powder, and turmeric powder. Bring to a simmer.
Return meatballs to the pan and let simmer for 10 minutes.
Serve over rice with fresh cilantro and lime juice.
