Easy Baked Tortilla Rolls

360 g minced beef
1 shallot
2 garlic cloves
1 tsp tomato paste
1 tsp paprika

Preheat the oven to 190°C (375°F) and get a 20 x 20 cm (8 x 8 inch) baking dish ready.
In a large bowl, combine the minced beef, shallot, garlic, tomato paste, paprika, sumac, allspice, salt, pepper, olive oil, and coriander. Mix until well combined, then divide the mixture into four equal portions.
Divide the mozzarella into four equal portions as well. Working with one tortilla at a time, spread one portion of the meat mixture evenly on top and sprinkle with one portion of the mozzarella. Roll it up tightly, then repeat with the remaining tortillas, meat, and cheese. Trim the ends of each roll (don’t throw them away) and slice each one into five equal pieces, about 4 cm wide.
In the baking dish, combine passata, water, shallot, salt, pepper, dried parsley, tomato paste, and sugar. Stir until everything is well mixed. Scoop out one cup of this sauce and set it aside.
Arrange the tortilla rolls cut side up in the dish and tuck the trimmed ends along the sides. Pour the reserved cup of sauce evenly over the top. Bake for 30 minutes, then sprinkle the remaining mozzarella cheese over the rolls. Switch to convection mode and bake for another 10–12 minutes, until golden and bubbling. Let the rolls rest for 5–10 minutes before serving to allow the sauce to thicken slightly and the flavours to settle.
