Warm Apple Fritter Loaf

Nonstick cooking spray (for pan)

⅓ cup light brown sugar

2 tsp ground cinnamon

2 apples, peeled & chopped (I used half Granny Smith, half Honeycrisp)

⅔ cup + 2 Tbsp granulated sugar, divided

½ cup (1 stick) butter, softened

2 large eggs

1½ tsp vanilla extract

1½ cups all-purpose flour

1¾ tsp baking powder

½ cup + 1–3 Tbsp milk, divided

Pinch of salt

½ cup powdered sugar (for glaze)

Prep – Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

Mix cinnamon sugar & apples – Stir brown sugar + cinnamon together. Toss apples with 2 Tbsp sugar.

Make batter – Cream butter + remaining sugar until fluffy. Beat in eggs and vanilla. In a separate bowl, whisk flour, baking powder, and salt. Add dry mixture alternately with milk until just combined.

Assemble – Spread half the batter in the pan. Top with half the cinnamon sugar + half the apples. Repeat with the rest.

Bake – Bake 50–60 minutes, until a toothpick comes out clean.

Glaze – Cool 10 minutes, then remove to wire rack. Mix powdered sugar with milk until pourable and drizzle over bread.

Enjoy – Slice thick and serve warm or cooled!
