Italian Chicken Thighs

2 Tbsp. white wine vinegar

2 Tbsp. olive oil, divided

2 tsp. Dijon mustard

3/4 tsp. kosher salt

1/2 tsp. ground black pepper

2 cloves garlic, minced

2 tsp. dried Italian seasoning, divided

1/2 tsp. crushed red pepper

1/2 tsp. onion powder

6 (6 to 8 oz.) bone-in, skin-on chicken thighs

Gather all ingredients.

In a small bowl, whisk together vinegar, olive oil, mustard, salt, pepper, garlic, Italian seasoning, crushed red pepper, and onion powder.

Place chicken thighs in a large zip-top plastic bag and pour marinade over, tossing to coat. Refrigerate 8 hours or until ready to cook.

Preheat oven to 400°F. Line a large baking sheet with aluminum foil.

While oven preheats, remove chicken from refrigerator and let come to room temperature for 30 minutes. Remove chicken from marinade, discarding any liquid. Place chicken on prepared baking sheet.

Roast chicken 35 to 40 minutes or until chicken reaches an internal temperature of 165°F when measured with a meat thermometer and skin is golden brown and crispy. Let rest 10 minutes before serving.
