Coconut Curry Salmon

You’ll need:

3-4 salmon filets

1 tbsp olive oil

Salt and pepper

1 large shallot, finely chopped

2 garlic cloves, grated

1 tbsp fresh ginger, grated

2 tbsp red curry paste

1 can unsweetened full fat coconut milk

1 tbsp fish sauce

1 tbsp sriracha

1 cup spinach, roughly chopped

Juice of 1 lime

Rice and cilantro for serving

Season salmon with salt and pepper.

In a skillet over medium heat add olive oil and place salmon skin side down. Cook until golden, about 5-7 minutes per side. Remove from the skillet.

In the same pan add shallot, garlic and ginger. Cook for 2-3 minutes, until shallot have softened.

Add in red curry paste and cook until the paste is fragrant, about a minute or two.

Pour in coconut milk, add fish sauce and sriracha and bring to a light simmer. Squeeze in lime juice.

Add spinach and cook until wilted.

Return salmon to the pan. Spoon sauce over salmon and serve with rice, limes and top with cilantro.
