1 1/4 cups shelled dry roasted pistachios (divided)
1/2 cup maple syrup
1 Tablespoon vanilla extract
1/4 teaspoon almond extract
3 cups cottage cheese (4% or whole milk)

Prepare a 9”x5” loaf pan (or large container) and set aside.
Add 1 cup of pistachios, maple syrup, vanilla, and almond extract to a blender.
Blend on high for 2 minutes, until creamy and smooth.
Add the cottage cheese and blend for another 3 minutes until fully smooth, scraping down the sides as needed.
Roughly chop the remaining 1/4 cup of pistachios and stir them into the mixture.
Pour into the prepared loaf pan, cover tightly with plastic wrap, and freeze for 8 hours or overnight.
Remove from the freezer and let thaw on the counter for 15–20 minutes.
Run your ice cream scoop under hot water, then scoop and enjoy!
