Chinese Tomato Egg

2 eggs (whisked)

salt

white pepper

ginger (grated/diced/or powder)

2 roma tomatoes, chopped in medium chunks)

salt

oyster sauce

ketchup

water

sliced green onions

White rice

步驟

Before starting: Cook your rice in the rice cooker.

1. Whisk together eggs, salt and pepper. Cook in pan till they are still a bit runny, remove from pan before they are fully cooked

2. Add oil to a medium heat pan, put in diced tomatoes and ginger. Add in salt, oyster sause, ketchup (1-2 tsp), and water (2-3 tbsp). Cook until tomatoes are starting to fall apart, but are still defined chunks.

3. Add back in eggs and cook until fully cooked.

4. Remove and plate with white rice. Sprinkle sliced green onions overtop.
