Instant Pot Tomato Soup

1 garlic clove

1 onion - medium

1 piece of chorizo about the length of your middle finger

2 small carrots

3 small sticks of celery

1 small pepper

2 x 400g tins of chopped tomatoes.

1 vegetable stock cube

1 pint of water

2 sugar cubes

1 tsp dried Oregano

a few sprigs of basil chopped

½ tsp chilli flakes

150g creme fraiche

2 tbsp tomato purée and to taste

salt & black pepper

步驟

1 Dice onion, garlic, carrots, celery, chorizo and julienne the pepper

2 Push Sauté button for high, add oil and let come to temperature. Add onion and garlic and sauté until the onion is soft

3 Add chorizo and cook for 1-2 minutes until it releases some of its oil.

4 Add celery, carrots, pepper, tomatoes, stock cube, herbs, tomato purée, sugar cubes, chilli flakes, salt, black pepper and water to the pot.

5 Pressure cook on high for 5 minutes

6 Do a natural release. You can leave on keep warm at this point if you wish.

7 Stir in creme fraiche, and season to taste, adding more purée if you wish.

8 Leave on keep warm for a few minutes to allow the flavours to combine.

9 Serve with brown bread or crusty roll

筆記

Try blending some basil leaves with extra virgin olive oil and drizzling on top or mixing basil pesto with olive oil and drizzling that over the top.
