Bacon Creamed Corn

4 slices bacon, chopped

4 cups frozen or fresh corn kernels (or 2 cans of corn, drained)

1/2 cup heavy cream

1/4 cup milk

2 tablespoons butter

1 tablespoon sugar (optional, depending on the sweetness of your corn)

Salt and pepper to taste

1. Cook Bacon:

In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Leave the bacon drippings in the pan.

2. Cook Corn:

Add the corn to the skillet with the bacon drippings. Cook for 3-4 minutes, stirring occasionally to ensure it’s well-coated.

3. Make the Creamy Sauce:

Add the butter to the pan and let it melt, then pour in the heavy cream and milk. Stir in the sugar (if using), salt, and pepper. Let the mixture simmer for 5-7 minutes, until it thickens to a creamy consistency.
