Creamy Pesto Turkey Mince with Chickpeas & Peas

This one is a bit of a protein monster.
1 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, chopped
500g turkey mince
1 tsp salt
Half tsp chilli flakes
1 tsp dried oregano
2 spring onions, chopped
1 courgette, diced small
1 tin chickpeas (including half of the liquid)
100g frozen peas, defrosted
2 heaped tbsp crème fraîche
1 tbsp pesto
parmesan
Handful fresh basil
Squeeze of lemon

Heat the oil in a large frying pan on medium heat.
Add the onion and garlic and cook for 2-3 minutes until soft and fragrant.
Add the turkey mince. Season with salt, chilli flakes, and oregano.
Brown the mince for 5-7 minutes until it’s fully cooked and starting to colour.
Add the spring onions and courgette, stir through, and cook for 2-3 minutes.
Pour in the chickpeas, along with half of the liquid from the tin.
Add the peas and let everything simmer for 5-6 minutes until heated through and slightly thickened.
Turn off the heat. Stir in the crème fraîche and pesto until fully combined.
Add the parmesan, stirring until melted and creamy.
Season to taste with black pepper and an extra pinch of salt if needed.
Finish with fresh basil and a squeeze of lemon just before serving yum yum
