Lemon & Thyme Chicken w/ Roasted Sweet Potatoes

4 Chicken Thighs (boneless/skinless)
1/2 Medium White Onion
2 Large Sweet Potatoes
1 Whole Lemon
Spices for Chicken (thyme, salt, pepper, garlic powder, onion powder, paprika, mexican oregano)
Spices for Potatoes (salt & pepper)
Olive Oil

Preheat oven to 350 F
1. Drizzle olive oil in the bottom of a casserole dish to coat.
2. Slice Onion in half, then quarter one half of the onion. Set aside other half.
3. Thinly slice the rest of the quartered onion. Set Aside.
4. Slice large lemon in half. Set aside one half, then slice thin rounds off other half & layer evenly in the bottom of the oiled casserole dish. Should be a single layer.
4. Layer onion slices on top of the lemons in the bottom of the oiled casserole dish evenly. Set dish aside.
5. Cover a baking sheet with parchment paper.
6. Peel & cube two sweet potatoes.
7. In a mixing bowl, drizzle sweet potatoes with olive oil. Then, add salt and pepper to the potatoes & mix until potatoes are evenly coated. Transfer sweet potatoes to prepared baking sheet in one even layer.
8. In the same mixing bowl used for potatoes, place chicken thighs, additional olive oil, chicken spices, and the juice from the other halved lemon. Mix until all thighs are evenly coated.
9. Place seasoned chicken thighs on top of onion layer in casserole dish.
10. Place Sweet Potatoes on top rack of preheated oven & chicken on bottom rack. Bake for 30 - 40 minutes-- until chicken is browned & sweet potatoes are crispy.
