Spicy Honey Bbq Sausage Pasta Skillet

12 ounces rotini pasta
1 pound smoked sausage, sliced into rounds
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup barbecue sauce
2 tablespoons honey
1 tablespoon hot sauce
1 can (10 ounces) diced tomatoes with green chilies, drained
1/2 cup chicken broth
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1 tablespoon chopped parsley, optional

Bring a large pot of salted water to a boil and cook the rotini according to package directions until just tender, about 8 to 10 minutes. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook for 4 to 5 minutes until browned around the edges.
Add the onion and cook for 2 to 3 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.
In a small bowl, whisk together the barbecue sauce, honey, hot sauce, chicken broth, garlic powder, onion powder, smoked paprika, and black pepper.
Pour the sauce into the skillet and stir in the diced tomatoes with green chilies. Simmer for 3 to 4 minutes until warmed through and slightly thickened.
Add the cooked rotini and toss until fully coated in the sauce.
Sprinkle the cheddar cheese over the top, cover for 1 to 2 minutes until melted, then garnish with parsley if using.
Serve hot straight from the skillet. Store leftovers in the fridge for up to 3 days.
