Preheat oven to 425°F. Grab 2 large sweet potatoes, poke holes all over with a fork, and lightly coat them in olive oil.

Bake for 45–60 min. While they cook, brown 1 lb ground meat (I used buffalo).

Season with curry powder, chili powder, turmeric, garlic seasoning, salt, pepper, and chili flakes (about 1 tsp each).

Add chopped bell peppers, jalapeños, red onion, and 4 cloves minced garlic. Mix well.

When the potatoes are done, slice them open and fluff the insides.

Load in the cooked meat + veggie mix.

Top with smoked Gouda (or your preferred cheese) and bake at 350°F until melty.

Finish with cilantro + a drizzle of honey. 🤤🔥
