You Can’t Go Wrong with Creamy Mushroom and Chicken Orzo Pas

1 1/2 cup orzo pasta

1/2 cup orzo

1 box of mushrooms, thinly sliced

1/2 cup sun dried tomato paste

1 cup heavy cream

2 1/2 cups chicken stock

1 medium onion, finely diced

5-6 cloves of garlic, finely chopped

1/2 cup grated Parmesan

Handful of fresh basil

1 teaspoon red chilli powder or red chilli flakes

4-5 tablespoons olive oil

1/4 stick of butter

For the chicken

4 skinless, boneless chicken breast

1 teaspoon garlic powder

1 teaspoon Italian mixed herbs

1 teaspoon ground black pepper

1 teaspoon red chilli powder

Salt to taste

Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden and cooked through. Remove and set aside.

Reduce heat to medium. Melt butter in the same skillet. Add onions and garlic, sautéing for 2 minutes until fragrant.

Add in the sun dried tomato paste, mix herbs and chilli powder.

now add in the mushroom and continue cooking for 2-3 minutes or until mushrooms are softened.

now add orzo into the pan and roast for a minute . Pour in chicken broth to deglaze the pan, scraping up browned bits.

Reduce heat to medium. Cover the skillet and cook for 10-12 minutes, removing the cover every few minutes to stir and ensure nothing sticks to the bottom of the pan.

add heavy cream and Parmesan and continue cooking for another minute. Garnish with fresh basil and drizzle few drops of olive oil on top!! ENJOY! 😊
