Spaghetti in Garlic Parmesan Cream Cheese Tomato

For the Pasta
12 oz spaghetti
For the Garlic Tomato Cream Sauce
2 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
1 (14 oz) can diced tomatoes, drained
1/2 cup heavy cream
4 oz cream cheese, softened
1 1/2 cups shredded mozzarella cheese
3/4 cup grated Parmesan cheese
1/2 tsp Italian seasoning
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
To Garnish
1/4 cup chopped fresh parsley

Cook the spaghetti
Bring a large pot of salted water to a boil. Cook spaghetti until al dente according to package directions.
Reserve 1/2 cup pasta water, then drain and set aside.
Build the sauce
In a large skillet over medium heat, add olive oil and butter.
Once melted, stir in minced garlic and sauté for about 30 seconds until fragrant.
Add the drained diced tomatoes and cook 3–4 minutes until slightly softened.
Make it creamy
Reduce heat to low. Stir in heavy cream and softened cream cheese.
Mix until the cream cheese melts completely and the sauce becomes smooth.
Add the cheeses
Stir in mozzarella, Parmesan, Italian seasoning, salt, black pepper, and red pepper flakes if using.
Cook gently, stirring constantly, until the cheese is melted and the sauce is rich and creamy.
Combine
Add the cooked spaghetti to the skillet and toss until fully coated in the cheesy tomato sauce.
If the sauce is too thick, add a splash of reserved pasta water to loosen it.
Serve
Plate immediately and sprinkle with fresh parsley before serving.

Stir in cooked chicken or shrimp for added protein.
Swap mozzarella for Monterey Jack or provolone for a different cheesy flavor.
